Coconut Washboards
Spirit of the Dawn Cuisine
Coconut Washboards
yields 20 fun 3-inch cookies

Coconut Washboards are one of my most favorite cookies
in every way including the name!

Place in food processor:

8 ounces Macadamia Nuts (unsoaked)
12 ounces pitted and chopped Medjool Dates
(about 16 jumbo grade moist dates)
1 cup shredded and dried Coconut
1 Vanilla Bean,
slit lengthwise with a sharp knife and insides removed with a small spoon
(save remaining pod for adding to a smoothie!)
1/4 teaspoon Pink Himalayan Crystal Salt

Process till mixture is creamy,
macadamia nuts begin to release their oils,
and dough forms a ball in the processor bowl.
Remove dough to mixing bowl and knead into dough with hands:

1 cup shredded dried Coconut

Prepare 2 dehydrator trays with mesh sheets and line with nonstick sheets.
Working with 2 Tablespoons of dough,
form each piece into a ball and then into a log about 2½ inches in length.
Place each log on a flat plate or cutting board and
using the tines of a fork make fun washboard ridges on each log.
Place the washboards on the lined sheets.
Dehydrate at 115 degrees for 4 hours.
Flip each cookie over and dehydrate for another 4 hours at 115 degrees.
Place cookies right side up on a mesh-lined dehydrator tray
and place tray on a wire rack to allow cookies to cool.
When completely cool, store between pieces of parchment paper
in an airtight container.
