This easy-to-prepare Raw Cranberry & Orange Sauce has just the right combination of tangy and sweet. Delicious as part of an all-raw Thanksgiving celebration or may be served with a combination of raw and cooked creations!
YIELDS: about 3 cups, double or triple to meet your needs
SPECIAL EQUIPMENT: Food Processor
8 ounces Cranberries, washed and picked over
8 ounces pitted Medjool Dates, chopped
1 cup freshly squeezed Orange Juice
Place all ingredients in the bowl of the food processor and process till creamy, whipped, and light scraping down the sides as is necessary. Sauce should be smooth with some texture as the dates and cranberries will not completely break down. May be served right away or stored covered in the refrigerator.
