
Celebrate corn season with this colorful salsa!
Spirit of the Dawn Cuisine
Summer Corn Salsa
yields 1 large quart
Serve inside large lettuce leaves
with Spicy Sunflower Pâté and Guacamole to create
amazing Summer Tacos.
all ingredients raw and organic
4 Ears Sweet Summer Corn,
husks and silk removed, tips cut off if necessary,
and kernels cut from ears with sharp knife
Separate into individual kernels and place in medium-sized bowl.
Add to bowl:
2 Large Tomatoes,
chopped in a medium dice
1 Large Orange or Red Sweet Pepper,
chopped in a medium dice
1 Bunch Scallions (about 8),
white parts only, sliced very thinly
Juice of 1 Lime
1 teaspoon Himalayan Pink Crystal Salt
1/4 teaspoon Chipotle Powder
2 Pinches Cumin Powder
Stir well to distribute the spices and add:
2 cups unpacked Cilantro Leaves, chopped
Taste and adjust seasoning,
adding more Salt, Chipotle, and Cumin as is necessary.
This colorful salsa is ready to be eaten,
though it will become more juicy as it sits.
To create amazing Summer Tacos,
place a scoop of Spicy Sunflower Pâté down a Large Lettuce Leaf,
top with Avocado Slices or Guacamole,
Summer Corn Salsa, and Microgreens.
Serve with Cold Lemonade in the Hot Sun
and Enjoy!!!
